Some Adaptec cards ( you don't tell us which one you have ) are supported up to 
Panther -10.3 and Tiger - 10.4.
I have a Sawtooth using 10.4 which has a 2906 that is connected to a Umax 
scanner and it works fine.
Other cards like the Adaptec 2930 and 2930CU also work with Tiger.
The 39160 is also supposed to work with Leopard although I have never tried it.
It may be the scanner driver that is at fault.
You could look at " Vuescan" which is a scanner driver for those unsupported on 
OSX.
There are other tricks too for SCSI , scanners and OSX like powering on the 
scanner after the Mac has booted or powering on the scanner first then 
rebooting the Mac.
