ffmpeg is a headache to build from scratch, because it needs to many other libraries. I cheated, by installing Burn instead - which includes an already built copy of ffmpeg etc.

You can then invoke ffmpeg like this:

/Applications/Burn.app/Contents/Resources/ffmpeg -i movie.avi -target ntsc-dvd -b 5000k movie.mpg
