Well, mud stands for Multi-user dungeon. Some muds are just used for chatting and things, but most are used for games. It's basically a specially coded server you connect to with a telnet or mudding client. I don't claim to know a whole lot about how it works though, so I suggest you go to: http://www.randylaptop.com/mudding That site sums it up better than I can. As for new moon, there's a lot I could say about it. The descriptions of everything from spells, to attacks, to scenes in the quests you will find yourself doing are all extremely well-written. The world is large enough to get in some good exploration time, though exploring can prove dangerous if you're not careful. The character creation is not standard. By this I mean you actually go through a cool little mini-quest to set up your character's race, stats, gender, and so on. Player interaction is encouraged, and almost necessary if you hope to get the most out of this mud. I personally think player interaction is great, so this is a major plus for me. There's so much more I could say, but I would prefer to speak more of it in private, or through the use of more specific questions.
