Hi Yohandy,
Well, to make the game challenging each monster class should have its 
own hit point rating system for each weapon as you say. For example, one 
good shotgun blast should seriously injure a monster spider if not blow 
it apart on impact. However, undead warriors might have a lot more 
stamina since they are dead and you might need to upgrade to an even 
more powerful weapon like a grenade launcher or something.
