This very well may be a time to take off your contractor's hat and put on 
your consultant's hat. There are an incredible number of POS application 
out there, and most are quite good. It is entirely possible that your 
problem has already been solved, and for a reasonable price. As a 
consultant you can bill for building the project specification as well as 
implementation, so you have that angle covered.
