Pressed CDs for a low volume operation is probably not a good idea. They will be out of date before you use them, but the printed sleeve can be filled with a CD you burn yourself.
Have a look at Mepis, it looks and works better than Xandros, though it's less Windows refugee friendly. There's plenty of competition for you here in Baton Rouge. Both Computer Exchange and Applix sell used computers for about $200. Applix already does Linux and Computer Exchange wants to. You might see what kind of deal you can work out with Computer Exchange. I demonstrated Enlightenment on a laptop for a customer there and the owner tried to hire me.
