Because it is a text format. Text formats are:
- 10-100 times slower to read than binary formats (due to their extra
size and overhead of interpretation from text)
- Cannot easily be indexed, that is, it's not possible to create side
structures allowing to easily locate, and jump to, only the data in a
certain area, or data satisfying a certain alphanumeric filter

What you are trying to do sounds a lot like "feature portrayal", a
functionality of WMS GetMap that allows referring directly to a remote WFS
server to read and render its data, without even configuring the data
locally.
It is quite seldomly used because of its poor performance (it transfers
GML, which in the same order of magniture as JSON, performance wise), but
building a parallel of it for a REST JSON service would be possible if you
have the skills (or the funds), and then can afford the extra hardware
this extra flexibility will cost you.
