We are using Geoserver with windows in production environment for a few years now (I work for a ministry so it's not a small/basement company !) and I have to say that the installation using the .war file in a tomcat container is the way to go : Very good performances, backups and upgrades are easier since you just have to take a copy of a folder. You can also have several Geoserver instances on the same machine. I wouldn't use Geoserver on windows otherwise. No need to use windows installer.
