The example you provided seems to explain how to add a PostGIS database
and database, is this the same then for MS SQL Server databases? I
thought there was a need to use the JDBC driver... Also, having now
downloaded cURL, I getting myself confused with intergrating all this
with the Eclipse version of Geoserver. Have I massively over
complicated this and all I need to do is stick with the 'out of the box'
Geoserver, sending the command line calls via .NET?
Its probably obvious this is new territory for me!
Im using .NET to communicate with the server to create spatial tables,
its just then connecting them with Geoserver. I kind of expected to
have to pick up some Java, but if its not needed then all the better at
this stage!

Nope, not complicated at all, good questions :)
Unfortunately creating new feature types on the fly is something we
would really like to do soon, but have not gotten around to. But in the
case of databases, if a table already exists in the database you can add
it to geoserver using the restconfig api [1].
So essentially you would have to find some way to create the table and
then once created make the REST call. And then configure the OL map to
load up the new layer.

So you are looking to patch existing geoserver functionality? If so you
will probably want to checkout some things in the developer guide:

If you are just looking to connect geoserver to sql server you can do
that pretty much out of the box. You just need to download the sql
server extension [1] and then install the jdbc driver from microsoft. As
for creating thematic maps with geoserver that is also available out the
box and documented [2].
