Ciao Lucas, the NetCDF plugin for GeoServer does not read _generic_ NetCDF, it's been developed for gridded NetCDF files having dimensions following the COARDS convention are supported (custom, Time, Elevation, Lat, Lon). We are going to state this loud and clear in the NetCDF page for GeoServer, our fault.
