Ciao Simone, thank you for aswer me, now I understand why doesn't work. 
Can you send me a netcdf file example  and the netcdf.projections.properties , 
the file on "geoserver-2.9-SNAPSHOT/data_dir/user_projections" that you used 
too, please.? We gonna try to convert our files to this format to use this 
plugin on Geoserver

Ciao Lucas,the NetCDF plugin for GeoServer does not read _generic_ NetCDF, it's 
been developed for gridded NetCDF files having dimensions following the COARDS 
convention are supported (custom, Time, Elevation, Lat, Lon).We are going to 
state this loud and clear in the NetCDF page for GeoServer, our fault.
That said, I checked some the sample files on the netcdf page and most of them 
are not gridded nor georectified.

The files that I need to read with Geoserver are too big and private., and 
doesn't work equal :/
