I'd highly recommend CartoDB (http://cartodb.com/), a cloud-based tool/spatial database for quickly creating map visualizations. With CartoDB, one can easily import data (most common formats supported), design and publish interactive maps, share data, etc. The students can sign up for the free account for the class.
