The main problem with your suggested approach is that replacing significant words in a sentence with some junk string changes the meaning of the sentence such that the translation will not make sense. If the replaced word is a verb or a noun, the translator will lose the sense of the sentence and anything can (and does) happen. For example, when translating to French, the translator needs to know if the noun is masculine or feminine. Consequently, you cannot hide the words you do not want translating, you have to translate them and then back substitute them.
