I figured out a way, but there's sure no advantage to using
this over InDesign. I'm not sure this is even worth it.
You can first set up the tabs in the right place inside the
tex file,
then you can adjust the gabc file spacing to match the text
spacing for the lines after you SEE them in the pdf.
But... yeeeeccchhhkkk!

It is completely visual alignment.
The letters from the chant will be off a teeny bit from the
letters in the litany text lines.
Surely there is a *REAL* way to do this.

Well, I've spent a lot of time on this already.
I can't find any example of where it's been done except for
that graphic on the gregobase; I wish I could see the source
for that!
So I can do this, which makes the text look good:

But the problem is that these lines of the litany text will
not be aligned with the text in the gregorio staff - there
is no relation between the text and the chant.
There must be a way to do this.
I am certain that the chant on the gregobase
page(http://gregobase.selapa.net/chant.php?id=457) is done
in tex. Does anyone have the source for that which they
would be willing to share? I only have a few hairs left to
pull out!

To arrange the text as in that litany you'll probably
want to use a table which is stretched to fill the text
width. Look for the tabularx package.
A problem with the tabularx environment of LaTeX is that
it doesn't admit page breaks inside of the table: your
whole table must be on the same page. So you have to
compute how many lines will fit on your pages, and split
your table manually. This is annoying because when you
change the layout of your output, you will have to check
that the page breaks are still on the right place.
If you know a good solution for multi column output in
LaTeX across several pages, please let me know.
