Well... The way I did it on the litany is also purely visual. You can see
the source when clicking "Edit" on the chant. It was for an older version
of gregorio so some things should be different with later builds.

I used the Tabbing package, added some spaces in the gabc, and tried
tabulation length until they matched the score.

There's indeed no advantage to using this over InDesign... except it's
easier to integrate in a TeX project ;-)
