I experimented with the \parbox feature between <v> </v> tags, but it doesn't work: I get the whole staff messed up. I suppose this happens because gregorio itself is using something like \parbox and these features interfere. So you can ignore my two previous messages.

In gabc, you can introduce TeX or LaTeX code into the text between the tags <v> and 
</v>.

I suggest to pile all the syllabes that have to go under a specific note with 
the LaTeX command \parbox, separating the lines to be piled up with the \\ 
operator.

This makes it possible to do everything in gabc, solving the issue to line up 
the text and the notes.
