Dear Br. Samuel
For preserving the alignment with the syllabes, I suggest the following
to use the gabc notation for adding a second line to the text using the
[ ] operators and to use the trick for piling up with \parbox on that
second line.
%%
(c3) Pa[Fi](h)ter[li](h) ( ) de[Redemptor](h) ( ) cae[mun](h)lis[di](h) ( )
<b>De[De]</b>(i)us[us],(g.)
(,) mi(g)se(g)<i>ré</i>(f)<i>re</i>(g) no-(h)bis.(h) (::)

It should be noted that this trick will undoubtably break Gregorio's ability to
line up the syllables in the Latin style.
Of course a table or tabbing environment can't align the syllables that way
either.
In gabc, you can introduce TeX or LaTeX code into the text between the tags <v> and
</v>.
I suggest to pile all the syllabes that have to go under a specific note with
the LaTeX command \parbox, separating the lines to be piled up with the \\
operator.
This makes it possible to do everything in gabc, solving the issue to line up
the text and the notes.
Hoping this helps.
