Where do I find the list of commands?

I have found GoldWave to be very accessible.  There is a list of keyboard
commands to help.  My suggestion is that you save the recorded file as a
.WAV so you can make any modifications without losing any of the quality.
This way, you can change things and save them and go back later and make
more changes, if you did not have enough time to complete them.  One point
to remember, though, is to always work on a copy rather than the original,
in case you save something and find out later that it did not do what you
wanted.  

It works quite well at automatically dividing tracks, but make sure you set
your first Q-point at the beginning of the first track, or else you will
lose that track.  

I only play around with it for practice as I do not have a good quality tape
player at the present time.
