If you hit control-j  or view your downloads from the tools menu there
is an options button where you can change the default download folder.
Also, to change on an individual basis you can either shift-f10 and go
to save target as, or hit enter on the download, do alt-nto bring up the
information bar, tab to the split button marked save, and down arrow to
save as.
