I use a seam ripper for buttonholes, but I place a pin at the end I am aiming for to stop the ripper before going too far. It's worked for me so far!
As for long slashes, I either use an x-acto blade, or I use my rotary cutter, again with a pin at the end to stop the cutting. I tend to use the heavy quilt pins as they can take abuse better than my silk pins.
