Hallo Seth,
My hurdy does the same sometimes and in my case it is really the G bourdon
resonating as Theo suggests. By damping this string string I can prevent it.
For that purpose you may clamp something to that bourdon string or, if
availabe, use a capo just touching the string.

 I just noticed that when I play the G with just the open string length
with one chanter connected only I get a loud bass G like a bass string..
When I hit the next note A or any other key it goes away and sounds good..
Its only happening on the Open G..   Seth
