What is the horozontal axis? Time in hours? What happens every 2 1/2
units
that the memory drops back down and starts to climb again?
Horizontal axis is day of the month in this case. What happens
every 2 1/2 days is that our monitoring system detects the
server is using too much memory and force restarts it.

Ahh...that is the missing piece of the puzzle. *Now* we have what looks like
a classic memory leak. Are you running any mods or plugins? If so, does this
happen without them?
