Have them update their games before the LAN like they should do in the first place.

Maybe you could get the latest copies of the client cache files (.gcf) and let them 
download them with manual update?
Steam\SteamApps\ for .gcf

They should still be able to play just fine though even if they're version is a little 
out of date.
