I've performed at least one entire cello suite before (5) and what I did  
was play the Hoss version, but look at the actual Cello score for any  
differences and penciled them in as needed.
 
The tessitura of the Hoss transcription really sits well for me esp. on  
that suite so your mileage may vary.

The Wendell Hoss version  has many significant deviations from the original 
Bach. My guess, after a fair  amount of examination of different editions 
and listening to recordings, is  that Hoss based his version on the suites as 
they were performed by Pablo  Casals, for whom any music was an opportunity 
to express his own personal  vision, rather than that of the composer. Not 
that there's anything wrong with  that ;-)
