Interesting, why is this called a fold? My English-Dutch dictionary (yes, real system programmers only consult manuals if all elses fail) explains all kinds of folds, folds in a piece of paper, folds in the earth's surface etc. And also 2 interesting translations related to sheep: the shed where the sheep stay for the night (your explanation) and also the flock of sheep. What is the origin of this special version of a fold related merely to sheep?
