If you are thinking about blocking yahoo messenger, then you may just forget (as per my knowledge). You can't block Y!m, it will use any port that is open to connect. But you can try another trick by tracking down all the IPs resolving to yahoo.com. I personally tracked upto 55 but never found a good luck.
Regarding blocking rated sites you may take help of SquidGuard or DansGuardian. Any of them works fine with squid. You don't have to configure iptables for that.
If you want to configure firewall with iptables there are no general rules for that and it won't be that easy to configure and understand later. You can try APF, which works on iptables and very easy to configure.
