I believe the only way to achieve this is to create separate OSX login
identities on your iMac. I don't use mail.app but I assume that, like
Entourage, it stores its e-mail database in the user's own area.

The downside of this approach, of course, is that you and your wife will
have to dial in separately to collect your individual mail.

But, under OS X, the assumption is that each user is a single individual
with complete control over his/her environment and data resources. With that
basic philosophy, it would make no sense to have different files within a
single user's environment which need to have additional password-based
security.
