You seem to worry about that using Mail or Entourage, you have already downloaded all your mail to your iMac, which gives you speed, but you don't want anybody to come near that mail, and would rather keep it on the server, like you do if you use webmail. This solution is just too clumsy, as the mail then resides completely on the server. If I were you, I would probably just be happy that you have now a true Multi-user-system, and would just make a login for your wife, and one for yourself.
