What I meant was that what you want -- the only way you're going to 
achieve a semi-respectable level of privacy other than using imap mail 
or keeping it web-based -- is to *set up an email server on your own 
machine.*

This server will intercept ALL email that comes into your machine, and 
route it to each person's own personal email client, which (one 
presumes) would be only available to them by logging in to their own 
account. IOW, your email would never be seen by anyone else, your 
wife's email would never be seen by anyone else (well as the admin of 
course you COULD see if it you want to be a real SOB about it I 
suppose) because you have to be logged in as that user and using that 
user's email client.

To the best of my knowledge (which I will readily admit is not complete 
in this area), no email client I know of offers what you seek. Maybe 
you should drop a line to the OS X feedback page about this, it's 
certainly an interesting idea.
