If Entourage has inherited any of the features of Outlook (not Outlook Express), then it should be relatively simple.
I do not have Entourage, so I'll go through how to set it in Outlook -- then maybe you will be able to stumble through Entourage to see if it is there. Outlook: "Tools" pull down menu; in the "Services" there is a setting to add users, and there is a setting somewhere in there to not logon automatically to a user configuration but to prompt at startup with a user name selection list which will challenge with a password. Unfortunately I do not have my Wintel notebook infront of me (left it at work) to describe in detail. Hopefully the above will have enough hints to allow you to find the same feature in Entourage (if it exists). But setting up separate logon profiles in OSX is a more elegant solution (and I recommend this). Your wife will be able to select her own background, her own sounds, her own screensavers, her own dock, her own preferences, her own iCal (if OS X 10.2), etc. If she is not a power user, do not give her administrative rights (don't check the box labeled "Allow user to administer this computer").
