It isn't practical to *really* get this level of protection, but you
can do pretty well by creating an encrypted disk image (using disk
copy) with a long, hard-to-guess passphrase, and storing your sensitive
files on it.  Make sure you don't store copies elsewhere (like on the
desktop).  Don't lose the passphrase and don't write it down somewhere
where it will be easy to find.  Make sure to unmount the disk image
(I believe this will happen if you log out, so do that).

Note: I don't know what vulnerabilities Apple wrote into this, but
it should at least slow someone down--they claim to use AES128, which
should be pretty strong.
