OS X is multilingual... just go into International prefpane and set it to whatever language you want the system to be in. I switch back and forth between English, Spanish, and Japanese frequently. The keyboard is more tricky, but not really if you're a touch typist. Just set your Keyboard layout (which is in the International prefpane's "Input Menu" tab) to Spanish, and check out Key Caps to see what it's mapped the keyboard to. Even though the keyboard I'm typing on is QWERTY (ye olde standard US QWERTY), I'm actually a Dvorak typist myself... I just set my layout to Dvorak, and don't bother to look at the keyboard, cuz I know that (physically) it's wrong..... for instance, I may be hitting the key that has 'H' painted on it, but I'm actually typing a 'D'.
