Ah, at last we get to the real question.

Assuming you max out the RAM, there's no reason you should see any 
performance degradation between 9 and OS X doing what you're doing. The 
stability of OS X is a *huge* plus in my book, but admittedly Finder 
operations (such as opening and closing windows) are still a bit faster 
in OS 9. If that iMac had a better video card maybe that wouldn't be 
the case, but it doesn't and there's no replacing it so there ya go.

Bottom line:

OS X - more stable but perceptibly slower doing Finder operations, 
needs lots of RAM to run at its best
OS 9 - more crash-prone, freeze-prone but faster, though manually 
assigning RAM is a *drag*
