I helped installing 10.2 on a friends computer and selected Chinese as main
language, as he does a lot of business there. After a few days, he called
and asked me to change it to Danish, which was very easy, so don't worry too
much. . 

I don't remember if it is as easy in 10.1, but I do remember doing a similar
install on 10.1(I think that one had to be French), and I believe that for
everything to work out including login panel, I had to resort to Tinkertools
or similar hack.
