I keep iTunes, iPhoto, Entourage, Safari, Word, DevonAgent, TextEdit, and Preview in the Dock.
I always find it fascinating to find out what people keep in their Docks. Says a lot about what they use the computer for. :)
For anyone who's interested, here's what's in mine (excluding Finder and Trash, which HAVE to be there :P they "bookend" everything :)), left to right:
In the apps section: Mail, MSN Messenger, Safari, Sherlock, DVD Player, iTunes, My DVD Library, LimeWire, Final Draft, AppleWorks, PCalc, Address Book and iCal
In the folders section: gelfling (my Home Folder), Applications and Shared.
