As a Windows user also I'd pretty much say that it's down to Windows 2000 - the most stable, however XP Pro is slightly smoother in it's AFP transfers when you transfer files. XP is also fairly slow on Virtual PC (My iMac 1GHz, 512MB RAM) whereas 2000 shows pretty good performance.
Windows 2000 performs regular tasks much faster, but XP is by far superior in it's multimedia capabilities - you'll find a lot of home packages designed for XP rather than 2000 but again it depends on your requirements and system specs.
