When one selects a lower resolution setting on an LCD monitor in order to
see larger type, the sharpness of the type suffers. This may be tolerable
for you. On the other hand, when one selects a lower resolution on a CRT
(tube) monitor, the type size gets larger without losing sharpness. This
may be significant enough for you to buy a Mac that will support a CRT.
There is a hidden option in Tiger that allows to change the size of all interface widgets. As far as I know, it is undocumented and suffers from a lot of bugs, but it allows to resize the interface from 50% to 300% of default size.
This would mean that you could make the interface bigger without sacrificing the sharpness, as everything would always be running at LCD's native resolution. This should help a lot for people with vision problems. Also, it will be a necessity sooner or later; right now most of Apple's displays have around 100 ppi, but the high-density monitors are around the corner.
Hopefully, this feature will be finished for next year's Tiger.
