I don't think iMacs come with AppleWorks. The list of software at http://www.apple.com/imac/specs.html does not mention it, and every sign on Earth tells that this package is headed towards oblivion anyway.
It's still there. It is actually listed at the page you mention, and at http://www.apple.com/imac/software.html .
It really is overdue an upgrade. Just getting it to display proportional fonts properly would be a start.
I'd say 256 MB is too little for your scenario, especially the "several of them simultaneously" part. For me personally even 512 MB is too little right now, but I'm using Photoshop, InDesign and like. But I definitely wouldn't go below half a gig in your case.
Seconded. I don't have an iMac G5 yet, but I ran Panther for a couple of months on an iBook G4 with 256MB. It worked OK, but was definitely sluggish with half a dozen apps running (mail, browser, RSS, WP, usenet newsreader, iTunes - nothing as demanding as Photoshop), especially when switching between apps or opening Finder windows with lots of files or folders. I chose to add another 512MB, and the difference was impressive. 512 total might have been enough for my purposes, but more is better.
