You can do this with Imail.  You can assign IP's to domains or
have IPless domains.  The only real difference would be the method
in which they log in and how their DNS records are handled.

IP Assigned:
Host: domain.com
Alias: mail.domain.com
Log on: username
DNS: domain.com. IN MX  5 10.0.0.1

No IP Assigned:
Host: nutherdomain.com
Alias: mail.nutherdomain.com
Log on: [EMAIL PROTECTED]
DNS: nutherdomain.com. IN MX 5 10.0.0.1

It is actually pretty easy to set up either if the machine configuration
is right and the DNS is working properly.
