We use folder redirection on our AD domain ( you can setup via local group policy editor as well). We setup a \\server\redirection$\<username> share for each user, in that directory we have a "my documents' folder and "outlook" folder. We then move the outlook pst file into the outlook, start outlook and point it to the share to find the missing pst and then it gets included in every backup we have of the server. Does almost the same thing as what James wrote below, but saves on all the Veritas licensing...

We also sprung for the Desktop Laptop Option. It will create on-the-fly backups of your PST files. It monitors for changes in selected directories and files and automatically backs those up to a central storage server either on a schedule or as soon as the change is detected. We use it to keep our users' PST files backed up and also to back up the "My Documents" folders of our laptop users (desktop users have their "My Documents" located on a file server). It even does revisioning. I think the minimum amount of licenses we could buy for it was 100, though.
