Thanks.  I don't know what the logging is, but if it's packets, I'll bet
they're being filtered somehow.

well, the signal is just packets in the POP3 session.

you could turn on pop3 debug logging (and temporarily turn off all other
logging by other services to keep you log file readable) to try to see
where the POP3 session is breaking.
