The messages appeared to be received, just not delivered.  This has been
happening a couple times since the upgrade to 7.X

The strange part is, I, personally had no troubles, one of our other staff,
couldn't send messages to herself nor anyone else.  No undeliverable
message, no bounce.

It looks like the server assigns a spool file, but it is never processed.  I
searched the rest of the log and these two files don't exist anywhere else.
They look like they were assigned and then just disappear.  The files are
not in the spool folder either.

This is our only server.  No backup.

Sure saves on bandwidth.  Someone sends a message, and it just disappears.

Did you check the IMail SMTP log file to see if those E-mails were received
by your server?

It could be that the E-mails bounced while the Internet connection was
down, or they are sitting on other servers waiting to be delivered
(although most servers will re-try after less than an hour, some will
increase the delay between connection attempts).  Or do you have a backup
mailserver that the mail is sitting on?
