For another perspective, I had a server that was compromised using an
arcane hacking technique that I had not patched for.  My virus scanner
saved my butt because as quick as the hacker dropped nasty files onto my
box, the scanner dumped them into the bit bucket.  The notification
service let me know the minute it detected the hacked files and I was
able to shut the server down and prevent the attack.  Cleanup consisted
of patching and verifying the patch, then emptying my quarantine bin,
instead of reinstalling my whole server, or getting compromised without
my knowledge.

So pick a product carefully, keep the scanning to reasonable directory
and extensions, scan only incoming files (not outgoing files), but be
very cautious about running anything exposed on the internet without
virus scanning of some sort.  Many service-based scanners let you set
the priority they run at with win2k.

FWIW, I use Inoculan and Norton Corporate Edition on access scanning on
web servers and mail servers.  Properly configured I've had no perceived
slowdowns that can be attributed to them.  If you don't have the
horsepower - get a more powerful horse, don't make the rider walk.

On-access/Real time scanners running a mail server are not a good idea
in general, especially McAfee, which is a dog in general wrt speed.
