If it is bombing out during a network copy then you could try this... Install an unconfigured version of IMail onto the target server. Stop all IMail services on the target.
Run an NT backup session of just the IMail directory again making sure that all of the IMail services are stopped. You could do by tape or to a file and share the folder in which the backup file is located. Run a restore of that file on the target machine. This should transfer your users and folders etc...
