I haven't really thought this through very thoroughly but you might
consider employing a proxy of some kind.  If not IMGATE then you might
consider XWALL from Dataenter:

   With XWALL you could easily apply certain global settings to all
   mail destined for your IMAIL server and you can send mail from
   IMAIL through XWALL for certain outgoing tests. The author is very
   responsive. It is multi-threaded, capable of mrtg, and capable of
   handling a lot of messages. And it's inexpensive.

   This would allow you to set your MX so that all incoming came to
   XWALL server first and then to IMAIL.  And it would give you a
   place to test outgoing from IMAIL.

   It certainly is not as flexible as postfix but you might be able to
   get some ideas from it or there may be others out there.
