So what fixes the bug on my end? I recently checked out our domain and its MX record didn't have the reverse DNS lookup, so I'm in the process of updating that, but could this have been the reason Imail went to the A record instead of the MX record?
No -- your MX record(s) will only affect incoming E-mail, not outgoing E-mail.
In this case, I believe you would need to upgrade IMail.
