Yep: it's called forwarding. :) A simple forward placed on a user's account will cause all mail to be delivered to another account on another (or the same) server. Or, since such a user has no need for an IMail mailbox at all, you can can be be more straightforward and use an alias pointing to the remote address. Neither of these require any change to relay settings.
