We had the same problem with 8.05. It got alot better when we updated to 8.1x. So I would recommend updating to the latest version.

Also, one of the things that we did during the 8.05 period where the service would stop was use a utility we wrote (QueueMon) to monitor the queue and when it reached a certain level we restarted the smtp service.

Running 8.05 with HF2 or 3... On the 10th last week, the SMTP service
