iMS is not altering the subject - rather your email client is decoding it.  The original mail has a MIME-encoded subject.  The iMS SMTP server will provide you with variables that contain the original subject and the decoded subject.

When I send out an e-mail with the subject below, exchange servers receive the subject properly, however IMS receives it differently. I have narrowed the issue down to the apostrophe. Any ideas as to what is causing the problem? It doesn't occur for every subject with an apostrophe. Only this particular sequence.
