I agree with you on Gordon Fee, John Stott, CS Lewis, Richard Foster,
Dietrich Bonhoeffer...

Has Francis Schaeffer been forgotten since his death? I read all his
books back in the 70s. 'True Spirituality' remains on my bookshelf.

Here are some other favourites of mine:

Apologetics:
Lee Strobel's 'The Case for Christ' and 'The Case for Faith'
English and far less wordy: Roger Forster and Paul Marston
'Christianity, Evidence and Truth'
Not least: Ravi Zacharias's books, 'Jesus Among Other Gods', 'Deliver
Us from Evil'

Theology: John Bright 'The Kingdom of God' 1953, but still relevant!
[I read it in the early 90s, not the 50s]
Edwyn Bevan, 'Symbolism and Belief' The Gifford Lectures 1933-4!!
 - very significant for me when I read it in the 60s
Recent: Rikk E. Watts - I haven't read a whole book by him, just some
short pieces and a very stimulating essay in a book I've lent my
minister, and can't remember the title!

Church History: FF Bruce's books, and especially 'The Spreading Flame'

Popular Christian books: Philip Yancey's. 
Rebecca Manley Pippert: Out of the Saltshaker...

Novels and Current Affairs:
V.S. Naipaul is my favourite living secular writer. I've never read
any of his non-fiction that hasn't captured the essence of a place, an
issue or a person. His two books on travel in Muslim countries,  
'Among the Believers' and 'Beyond Belief' are particularly fascinating
for having been written by someone from a Hindu background.
His 'Enigma of Arrival' was the most ponderous novel I've ever read,
but had such an 'aha' moment at the end that I felt like rereading it
immediately!
